Judy's Best Ever ANZAC biscuits

In time for ANZAC Day, park owner-operator, Lorraine, has baked up a batch of her mum (the park's co-founder), Judy's, famous ANZAC biscuits. Judy was always in charge of the Beacon Team's smoko snacks and we are currently compiling a cookbook of all her delicious recipes.

In the meantime, here is Judy's recipe for the best ANZAC biccies in the world 
Time for some Friday afternoon baking (or, just hit save and come back to the recipe later). This is a must-try! 


  • 2 cups plain flour
  • 2 cups brown sugar
  • 1 cup coconut
  • 2 cups rolled oats
  • 2 TSP bicarb soda
  • 2 tsp warm water
  • 225g butter
  • 2 TBSP golden syrup


  1. Preheat oven to 160 degrees
  2. Combine flour, brown sugar, coconut and rolled oats in mixing bowl
  3. Melt the butter and golden syrup on the stove and bring to the boil
  4. Add bicarb soda and warm water to butter mixture
  5. Bring to the boil and pour into dry ingredients and mix well
  6. Roll into balls "about the size of a walnut" and place on baking tray
  7. Cook for 12 minutes

Judy's Helpful Hints:

  • Remember, when the biscuits are half cooked, use a spatula or fork to flatten them
  • Leave the biscuits on the tray until they cool down. This helps them to cook a little more
